Bring a palette of bright color to the table with this savory blend of sweet corn, bell peppers and red onion, all topped with the bright green of fresh herbs.

Ingredients

  • 2 Tbsp
    olive oil
  • ½ cup
    chopped red onions
  • 1
    orange or red bell pepper, ½-inch chopped
  • 2 Tbsp
    butter
  • 4 cups
    Super-Sweet Cut Corn (773), thawed
  • 2 tsp
    heavy cream or half & half
  • Salt and pepper, to taste
  • 2 Tbsp
    chopped fresh basil and parsley

Instructions

1. Heat olive oil in large sauté pan over medium heat.

2. Add onions and sauté 4–5 minutes.

3. Stir in bell peppers and continue to cook 2 minutes.

4. Mix in butter, corn, cream, salt and pepper.

5. Continue cooking, stirring occasionally, for 5–7 minutes or until heated through.

6. Fold in herbs, adjust seasoning to taste, and serve.
