These naturally hardwood smoked pulled pork sandwiches have the perfect balance between tart, sweet, and spicy.

Ingredients

  • 2 large
    red onions
  • 1/4 cup plus 2 Tbsp
    balsamic vinegar
  • 1/4 cup
    olive oil
  • 1 Tbsp
    sugar
  • salt and pepper, to taste
  • 6
    bakery buns, sliced
  • 1/2 cup
    zesty BBQ sauce

Instructions

Preheat oven to 350°.

Slice onions into ¼-inch thick slices.

Toss with ¼-cup balsamic vinegar, olive oil, sugar, salt, and pepper.

Place on baking sheet and bake 10 to 12 minutes or until onions are tender.

Remove from oven, toss with remaining vinegar.

Divide pork onto rolls, top with BBQ sauce and onions.
