Fresh and healthy! Great served as a snack, meal starter or appetizer.

Ingredients

  • 1/4 cup
    extra virgin olive oil
  • 1 clove
    fresh garlic, minced
  • 1 cup
    Green Peas (766), prepared according to package instructions
  • 1/2 cup
    shaved Parmesan cheese
  • 4-6
    chopped fresh mint leaves
  • Kosher salt, to taste
  • 1 tsp
    balsamic vinegar

Instructions

1. Preheat oven broiler.

2. Combine 2 Tbsp. of olive oil and garlic.

3. Lightly brush both sides of bread with mixture.

4. Place onto baking tray and broil 1-2 minutes on each side or until lightly toasted.

5. Mash together peas, salt and remaining olive oil with the back of a fork.

6. Spread mixture over toast. Garnish with Parmesan, mint, and a drizzle of balsamic vinegar.
