This delicious Thai inspired salad is perfect as a light meal or side to bring along for a picnic!

Ingredients

  • Dressing
  • 1/2 tsp
    minced garlic
  • 2 tsp
    fresh ginger, minced
  • 1/4 cup
    olive oil
  • 2 Tbsp
    rice vinegar
  • 3 Tbsp
    soy sauce
  • 3 Tbsp
    honey
  • SALAD:
  • 2 cups
    fresh baby spinach
  • 1/2 cup
    carrots, julienned
  • 2
    green onions, sliced
  • 1 cup
    fresh bean sprouts
  • 1/4 cup
    Fresh mint leaves
  • 1/4 cup
    fresh coriander leaves
  • 1
    red chili pepper, sliced thin
  • Garnish
  • 2 Tbsp
    roasted peanuts, chopped

Instructions

1. Blend together dressing ingredients.

2. Mix salad ingredients together.

3. Drizzle dressing over salad and toss lightly.

4. Top with garnish and serve.

Tip: Great served with SCHWANS Mahi Mahi.
