This delicious Thai inspired salad is perfect as a light meal or side to bring along for a picnic!

Ingredients

  • Dressing
  • 1/2 tsp
    minced garlic
  • 2 tsp
    fresh ginger, minced
  • 1/4 cup
    olive oil
  • 2 Tbsp
    rice vinegar
  • 3 Tbsp
    soy sauce
  • 3 Tbsp
    honey
  • SALAD:
  • 2 cups
    fresh baby spinach
  • 1/2 cup
    carrots, julienned
  • 2
    green onions, sliced
  • 1 cup
    fresh bean sprouts
  • 1/4 cup
    Fresh mint leaves
  • 1/4 cup
    fresh coriander leaves
  • 1
    red chili pepper, sliced thin
  • Garnish
  • 2 Tbsp
    roasted peanuts, chopped
  • 4 fillets
    Wild-Caught Mahi Mahi Fillets (535), prepared according to package instructions

Instructions

1. Blend together dressing ingredients.

2. Mix salad ingredients together.

3. Drizzle dressing over salad and toss lightly.

4. Top with garnish and serve.

Tip: Great served with SCHWANS Mahi Mahi.
