A roasted sweet potato side dish that is delicious and easy to prepare for all occasions or family gatherings.

Ingredients

  • FILLING:
  • 1 cup
    milk
  • 2 Tbsp
    butter, melted
  • 1/2 tsp
    salt
  • 2
    eggs
  • 1/2 cup
    brown sugar
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    vanilla
  • TOPPINGS:
  • 1 1/2 cups
    cornflakes, crushed
  • 1/2 cup
    chopped pecans, toasted
  • 2 Tbsp
    light brown sugar
  • 1 1/2 Tbsp
    butter, melted
  • 1 1/2 cups
    miniature marshmallows

Instructions

1. Preheat oven to 350º.

2. Add  filling ingredients into a mixer and blend until smooth or desired consistency.

3. Place mixture into 8 small ramekins or  large oval casserole dish sprayed with oil.

4. Combine cornflakes, pecans, sugar and butter together.

5. Sprinkle over sweet potato mixture and top with marshmallows.

6. Bake 40-45 minutes or until mixture has set.
