A chicken and pasta salad with a Tex-Mex twist.

Ingredients

  • 2 cups
    Penne Pasta, prepared and chilled
  • 1 cup
    Super-Sweet Cut Corn (773), prepared according to package instructions & chilled
  • 1/2 cup
    finely diced red onions
  • 3/4 cup
    mayonnaise
  • 1/2 cup
    salsa
  • 1 cup
    shredded Mexican-style cheese
  • 1/4 cup
    chopped fresh cilantro
  • 8 small
    glass jars with lids

Instructions

1. Layer jars with pasta, corn, chicken and onions.

2. Mix together mayonnaise and salsa and drizzle over salad.

3. Top with cheese and cilantro.

4. Cover jars and refrigerator until ready to serve.
