This delicious Thai inspired salad is perfect as a light meal or side to bring along for a picnic!

  • 1/2 cup
    creamy peanut butter
  • 2 Tbsp
    soy sauce
  • 1 Tbsp
    sesame oil
  • 1/4 cup
    rice wine vinegar
  • 8 oz
    whole wheat spaghetti noodles, prepared
  • 1/2 cup
    roasted peanuts, chopped
  • 2
    green onions, sliced


1. Combine together peanut butter, soy, oil and vinegar.

2. Mix peanut sauce with vegetables and noodles.

3. Garnish with peanuts and green onions.

Tip: Add some heat to the peanut sauce with a little Asian hot chili sauce.
