Fresh and sweet salsa is wonderful over Mahi Mahi fillets

Ingredients

  • 1 cup
    diced fresh pineapple
  • 1
    kiwi, peeled and diced
  • 1/2 cup
    mango, peeled and diced
  • 1/2 cup
    diced red peppers
  • 1/2 cup
    chopped red onions
  • 1 Tbsp
    fresh lime juice
  • 1/2 Tbsp
    jalapeno, seeded & diced
  • 3 Tbsp
    chopped fresh cilantro
  • Salt and pepper to taste

    Mahi Mahi Fillets (536), prepared

Instructions

1. Combine all diced fruits, vegetables, herbs and lime juice to make a salsa.

2. Cover and refrigerate until ready to serve.

3. Prepare Mahi Mahi according to pan fry instructions.

4. Serve salsa over Mahi Mahi.

Tips: For a refreshing twist add diced cucumbers or strawberries.
