Ingredients

  • Lasagna Roll Ups(400), frozen
  • 4 large
    Pablano peppers
  • 1 1/2 cups
    chunky salsa
  • 1 can (10.5 oz)
    enchilada sauce
  • 1 can (12.5 oz)
    black beans, drained & rinsed
  • 1 cup
    sour cream
  • 1 cup
    shredded cheddar cheese
  • 1 Tbsp
    chopped fresh cilantro

Instructions

1. Preheat oven to 375°F.

2. Cut a slit into Pablano peppers and remove seeds

3. Microwave lasagna rolls 1-2 minutes to partially thaw.

4. Stuff lasagna rolls into open slit of peppers and place in medium casserole dish.

5. Mix tomatoes, enchilada sauce, beans, sour cream, cheese and cilantro.

6. Pour sauce over peppers. Cover with foil and bake for 35-40 minutes. Uncover and cook an additional 10 minutes.
