  • 1 Tbsp
    chopped fresh herbs (thyme, parsley, basil)
  • 2 cups
    assorted sliced and sauteed vegetables (onion, pepper, mushroom, asparagus)
  • Salt and pepper to taste
  • 1 cup
    shredded cheddar cheese


1. Preheat oven to 350° F.

2. Line non-stick muffin tins with bacon.

3. Scramble together eggs and milk.

4. Pour mixture into muffin tins and top with desired toppings.

5. Sprinkle with herbs, salt and pepper.

6. Bake for 15-20 minutes or until mixture is set.

Tip:Can also be made by simply cracking an egg into bacon wrapped muffin tin. For easy removal, lightly spray muffin tin if it is not a non-stick.
