A tantalizing ginger sweet and fruity salad!

Ingredients

  • 1/2 cup
    balsamic vinegar
  • 1 tsp
    grated fresh ginger
  • 1 Tbsp
    brown sugar
  • 2 Tbsp
    honey
  • 1 tsp
    chopped fresh mint leaves
  • 3 cups
    fresh baby spinach
  • 1/2 small
    red onion, thinly sliced
  • 1/4 cup
    sliced almonds

Instructions

1. Preheat oven 350 F.

2. Place fruit on aluminum foil lined baking sheet. Bake for 10-12 minutes or until tender.

3. Heat vinegar, ginger, sugar, honey and mint in small saucepan over medium-high 4-6 minutes or until mixture thickens. Cool.

4. Mix together fruit and dressing and lightly toss with spinach.

5. Top with onions and almonds.
