1. Remove 1/2 cup strawberries and set aside for garnish.
2. Combine remaining strawberries, vinegar and sugar in blender. Puree until smooth.
3. Drizzle oil slowly into mixture while blending to make a dressing.
4. Arrange lettuce onto two salad plates and top with sliced chicken and cheese.
5. Drizzle with dressing and garnish with remaining strawberries.
Tip: Vegetable oil can be used in place of the olive oil.
