This fresh flavored warm and welcoming pasta is full of colorful veggies and herbs. Each serving offers you an excellent source of fiber and protein.

  • 1 Tbsp
    light olive oil
  • 4
    cloves garlic, minced
  • 1/2 cup
    sliced onions
  • 1/2 cup
    roasted red peppers, drained
  • 1 cup
    diced tomatoes
  • 2 cups
    fresh baby spinach
  • 1 Tbsp
    chopped fresh herbs (thyme, parsley, basil)
  • 1 Tbsp
    shredded Parmesan cheese
  • Pepper to taste


    1. Saute garlic and onions in olive oil over medium-high heat for 4 to 6 minutes.

    2. Add roasted peppers and tomatoes. Cook 2 to 4 minutes.

    3. Stir in prepared tortellini, spinach, herbs and cook till spinach wilts.

    4. Sprinkle with Parmesan and pepper before serving

    Tip: Use fresh diced zucchini in place of spinach.
