Chuck full of super sweet corn, fiber-rich earthy beans and Napa cabbage, this salad stands up for days. The simple syrup dressing is so light and refreshing…and no oil is needed!
1.Combine beans, peas, corn, garlic, celery, peppers, chopped cabbage and herbs.
2. Mix the sugar and vinegar and bring to a boil. Cool.
3. Pour cooled sugar and vinegar over salad. Best if refrigerate for 1 to 2 hours before serving.
