1. Saute sweet potatoes and onions in a non-stick pan for 8-10 minutes over medium-high heat.
2. Add spinach and black beans. Continue to cook for an additional 4-6 minutes.
3. Drizzle with dressing and garnish with pine nuts.
Tip: Also excellent with garbanzo beans instead of black beans.
