Broccoli is rich in nutrients, including antioxidants, which support good health.  An easy tart tangy side that fits with your favorite chicken, beef, pork or fish.

Ingredients

  • 1 cup
    cherry tomatoes, halved and roasted
  • 1/4 cup
    sliced black olives
  • 1 Tbsp.
    olive oil
  • 1 Tbsp.
    lemon juice, rice vinegar, or balsamic vinegar
  • 1
    clove garlic, minced
  • 1/4 tsp
    sea salt
  • 1/4 tsp.
    coarse black pepper

Instructions

1. Prepare broccoli according to instructions.

2. Stir roasted tomatoes and black olives.

3. Blend the olive oil, lemon juice, garlic, salt and pepper.  Pour over cooked vegetables before serving.

Tip: To roast tomatoes place in preheated oven at 450°F for about 12-15 minutes.
