  • Preparation

    Time to table:* 115 minutes

    • Prepare from THAWED state.
    • TO THAW: Remove from box and leave in pouch, place roast on a plate and thaw in refrigerator for 48 Hours.
    • 1. Preheat oven to 425°F.
    • 2. Remove thawed Pork Rack Roast from pouch and pat dry with a paper towel.
    • 3. Place in a shallow baking pan and season with olive oil and 1 Tbsp of Pork Roast Rub seasoning, or as desired.
    • 4. Position seasoned roast in pan so that the bone tips are pointing up.
    • 5. Bake on center rack for 20 minutes.
    • 6. Turn roast over, so that bone tips are pointing down, and bake an additional 20 minutes.
    • 7. Reduce heat to 325°F and continue to bake for 70 minutes.
    • 8. Let stand for at least 5 minutes before serving.
    • Note: Resting the Pork Rack Roast before slicing will allow it to retain the juices and moisture.
